So, I recently started eating salads with dinner. I've always loved salads which is mostly due to growing up with my dad's salads and fantastic salad dressing. When I lived in Oakland, I never ate salads because I couldn't easily get fresh vegetables since I only went grocery shopping like once every 3 or 4 weeks. So, now that I live in Shadyside and the Giant Eagle is on my way home from work and a short walk to my place, I can get groceries whenever I want. So, last week, I finally remembered that I could finally make salads. I made my dad's salad dressing for the first time ever and then a huge salad with red leafed lettuce, tomatoes, cucumbers, and broccoli. It was delicious.
So far, I've only made salads when I make pork chops cause everything else I make is pretty much a full meal. What I usually eat with the pork chops is brown rice and peas. So, I just substituted a salad for the rice and pease.
Another thing I discovered about making pork chops was the way I use garlic. Usually, I just chop it up and then put it in the frying pan with the pork chop and onions. Recently I remembered something my dad told me about rubbing the garlic into the pork before frying it. So, I did that and added whatever was leftover into the pan as well. I could definitely tell the difference. It was yummy.
I also decided to omit the onions once and it makes a huge difference in a negative way. Apparently, when I add the onions into the pan a few seconds after I put in the pork chop, it drops the temperature of the pan a bit. Cause when I didn't put the onions in and fried the pork for the same amount of time, it got a little bit burnt and ended up not being as juicy. The caramelized onions also add some great taste.
Today I added avocados to the salad. It wasn't really anything special, so once I finish this avocado, I probably won't get another one.
Also, I think I'll cut down the size of the salads...they're almost too big. Wouldn't want to overeat.

I wouldn't really count salads as overeating, though if you make them nice and big they can count as a whole meal if you're not particularly hungry. But I usually have a small plate salad and then a small plate meal. Or sometimes a salad for lunch. As for the avocado, its actually starting not to be avocado season. Also, I noticed that when I put less in, it's better. Mostly because it's good for texture, not taste. Avocados are good for you though. They have a good kind of fat in them and some vitamins not found elsewhere.
I'm telling you though, a very thin slicing of onion in the salad is delicious. I use red onion. The key is this though, so it's not overpowering.
If I had a safeway instead of a stoip and shop (which is the same as giant) i would get cottage cheese. That would make the salad more filling if you want it as a meal.
Also, I finally made spaghetti sauce last week and I've been eating it for lunches and stuff. Yum. I used two jalapeƱos. So it's a little hot but not too hot. I also made pizza, which was good, though a little under salted. Maybe I'll do some kind of meat this week.
